If your family likes cooked carrots as much as our family does — and you need an easy side dish recipe — this one is for you!

This Slow Cooker Baby Carrots with Honey and Brown Sugar recipe has onlya few key ingredients: baby carrots, brown sugar, honey, and butter (plus a bit of water and salt). We gave them a sprinkle with chopped fresh dill but if you’re looking to save money, you can certainly skip the garnish.

The easy part comes in because these glazed carrots are cooked in your Crock-Pot or slow cooker. Ideally, you will want to use one that is a 3 – 4.5 quarts size. Other than giving them a stir about halfway through, you can throw all the ingredients into the crock and let them do their thing. Once they are done, you have tender carrots that are sweet and delicious!

FAQs

What vegetables should not be added to a slow cooker? ›

Tender vegetables

Vegetables such as peas, asparagus and peppers can become a flavorless, mushy mess in a slow cooker.

When to add carrots to slow cooker on low? ›

Tender vegetables such as zucchini and beans can be added to your dish in last ¾ - 1 hour of cooking when cooking on High, or 2 hours if cooking on Low. Hard, starchy vegetables like potato and carrots are best added around 3 hours before the meal is done if cooking on High, and 4 hours on Low.

Why are my carrots still hard in the slow cooker? ›

Carrots may remain firm in a slow cooker if they're not cooked long enough or if the temperature is too low. Ensure sufficient cooking time and consider cutting carrots into smaller pieces for even cooking.

Should liquid cover vegetables in slow cooker? ›

Reduce liquid when using a slow cooker

It should just cover the meat and vegetables. Don't overfill your slow cooker, or it may start leaking out the top, and the food won't cook so well.

What vegetables are good in a slow cooker? ›

The best vegetables for a slow cooker are sturdier veggies like celery, carrots, tomatoes, onions, peppers and green beans, like we used in this recipe.

How long does it take for carrots to soften on low heat? ›

Cover the pan and cook over medium-low heat for 7 to 8 minutes, until the carrots are just cooked through. Add the butter and saute for another minute, until the water evaporates and the carrots are coated with butter. Off the heat, toss with the dill or parsley. Sprinkle with salt and pepper and serve.

Is it better to cook on high or low in a slow cooker? ›

Certainly, foods will cook faster on high than on low. However, for all-day cooking or for less-tender cuts, you may want to use the low setting. It's safe to cook foods on low the entire time -- if you're leaving for work, for example, and preparation time is limited.

Will carrots soften in a slow cooker? ›

Place the lid on your slow cooker and cook on high for 1 ½ - 2 hours OR on low for 2 ½ - 3 hours until the carrots are softened and cooked to your preference. Optional: sprinkle with parsley before serving.

Should vegetables go on top or bottom in slow cooker? ›

Slow cooker recipes have (obviously) long cook times, and it's the meat—not the carrots—that benefit from it. By placing the protein at the bottom (closest to the heating element), and vegetables at the top, you can keep your plant parts a little more toothsome, while ensuring your meat is fall-apart tender.

What happens if you don't brown meat before a slow cooker? ›

"Browning, or caramelizing, meat before putting it into a slow cooker isn't 100 percent necessary, but it is well worth the effort for the most flavorful and full-bodied end result," he says. "The caramelized surface of the meat will lend rich flavor and color to the finished dish."

Can you overcook vegetables in a slow cooker? ›

Adding Delicate Vegetables Too Early

Due to the slow cooker's lengthy cooking time, most vegetables will become overcooked and mushy if they're added too soon, says Stephen Chavez, chef instructor at the Institute of Culinary Education in Los Angeles.

Is it safe to leave the house with a slow cooker on? ›

Are slow cookers safe to leave on? Yes, it's safe to leave a slow cooker on when you leave the house. The purpose of a slow cooker is to allow you to cook while you aren't home. Slow cookers simmer food slowly, killing bacteria and raising meat to the perfect internal temperature.

What is the best meat to cook in a slow cooker? ›

Choose the right cut: Chuck roasts, short ribs, pork shoulders and lamb shanks (think fatty and tougher meats) become meltingly tender with the moist, low heat of a slow cooker. Leaner cuts like pork tenderloin tend to dry out. Likewise, dark meat chicken — thighs, drumsticks, etc.

Should you stir a slow cooker? ›

Resist the urge. Every time you lift the lid, heat escapes and adds up to 30 minutes longer to your cook time. Slow cookers are made so you don't have to stir with the low cooking temperature, so relax.

Do vegetables go mushy in slow cooker? ›

Certain vegetables: Delicate herbs and veggies like fresh tomatoes, zucchini, and peas won't fare well in the slow cooker, as their individual textures may become mushy and flavorless if left for too long. If your recipe calls for these vegetables, try adding them close to the end of cooking time.

Can a slow cooker overcook vegetables? ›

Delicate vegetables like asparagus, spinach, tomatoes, and peas, will overcook in a slow cooker. It's best to stick to sturdier vegetables like carrots and potatoes.

Can anything burn in a slow cooker? ›

The low temperature of slow-cooking makes it almost impossible to burn even food that has been cooked too long. However, some meats and most vegetables become nearly tasteless or "raggy" if over-cooked. Food can be set to slow-cook before leaving for the day so it is ready on return.

What does slow cooking do to vegetables? ›

By virtue of being in sealed unit, whether using an electric slow cooker or in a casserole dish in your oven, any of the nutrients usually lost in the liquid from heat are simply reabsorbed into the meal. Cooking over a longer period of time also increased flavour and reduces the need for added seasoning or sauces.
