Nothing beats a freshly grilled burger on a homemade hamburger bun. You won’t find a lighter or softer bun recipe. These are absolutely perfect and nice and big, but you can totally make them smaller for sliders. I like brushing mine with an egg wash and sprinkling with sesame seeds or everything bagel seasoning before baking. When the come out of the oven I give them a brushing with melted butter. YUM.

HOMEMADE HAMBURGER BUNS

The process for making your own hamburger buns is pretty basic. You’ll create a dough using flour, salt, sugar, yeast, water, an egg, and butter. Once the dough has doubled in size, you’ll split it into 8-10 sections.

Note: these make 8 big hamburger buns (5”). You can divide into 10 equal portions with a bench scraper for more standard-sized buns.

Roll each section into a ball and place it onto a greased baking sheet. These buns bake up big, so you’ll want to bake them 4 to a pan. This means that you will need to have two greased baking sheets ready to go.

Pat each bun down with your hands to give them more of a flat shape vs. a dinner rolls shape. You can see exactly how I do this in my video.

Once they’ve had a chance to rise again (this time for 30 minutes), brush with egg wash and sprinkle with sesame seeds.

These buns only take 20 minutes to bake, and are delicious when brushed with melted butter right out of the oven.

After allowing the buns to cool on a baking rack, store in an airtight container until dinner time! When ready to slice, use a serrated knife.

Tips for Making Homemade Burger Buns

Can I use my bread maker to make the dinner roll dough?

Absolutely! Run the dough through the “dough” cycle, shape into rolls, then let rise a second time before baking.

WHAT IS THE BEST KIND OF FLOUR TO USE FOR BREAD?

I always use bread flour or all-purpose. Honestly, I can’t tell a difference between the two.

WHAT IS THE BEST WAY TO PROOF YEAST?

I like putting the warm water into a small bowl with the yeast and sugar. Give it a stir. Place a small plate on top and let it sit for 5 minutes.

WHERE IS A GOOD PLACE TO LET THE DOUGH RISE?

A warm place is a perfect place for yeast to do its thing. I preheat my oven for 60 seconds then shut the heat off. I place my bowl of dough with a damp cloth covering it inside my oven.

      Regina,
Instead of freezing the dough to bake later, I bake them all and then freeze. I pull out as needed to defrost. It works beautifully!

I made these last night for the first time. They were good, but mine turned out like bread.. They weren’t soft and fluffy inside. I followed the instructions exactly as written. Are your rolls more like bread inside? I never am able to get a soft, fluffy texture inside.

They are a little more bread-like as they are a bun vs. a roll, but I still soft. Just not as fluffy as a roll. Hopefully that’s helpful.

FAQs

What makes the best burger bun? ›

The ideal soft burger bun should be pillowy, squishy, and tender, with a tight but soft crumb and a distinct sweetness. It should hold up nicely to the burger's juices, but should never be tough or cottony. On the opposite end of the spectrum, you don't want a burger that disintegrates half way through your meal.

Why are my homemade hamburger buns dense? ›

Avoid adding too much extra flour to the dough.

Your instinct might be to add extra flour; however, any extra flour will create a denser, tougher bun instead of the light, fluffy, brioche-style bun we want.

What are the ingredients in McDonald's hamburger buns? ›

Ingredients: Enriched Flour (wheat Flour, Malted Barley Flour, Niacin, Iron, Thiamine Mononitrate, Riboflavin, Folic Acid), Water, Sugar, Yeast, Soybean Oil, Contains 2% Or Less: Salt, Wheat Gluten, Potato Flour, Vinegar, Dextrose, Corn Starch, Modified Food Starch, Vegetable Proteins (pea, Potato, Rice And/or Faba ...

How do you keep burger buns moist? ›

To keep your burger buns fresh, store them in air-tight containers at room temperature. Avoid letting any moisture creep in to avoid them from getting soggy and mouldy. The air-tight containers will ensure that the buns don't dry out and retain their original moisture.

How do you keep buns soft when baking? ›

Add a little bit of milk to your egg yolk before brushing over the bread/before baking. The milk helps keep the buns soft and the yolk gives them a good colour.

What are the best buns for burgers that don't fall apart? ›

Brioche buns are light and fluffy and are full of eggs and butter, making them extra delicious. They are the perfect bun for burgers as they can hold up to burgers piled high with toppings without falling apart or getting too soggy.

What are the characteristics of a good burger bun? ›

The bun flour should have good viscoelastic properties and a high gas retention capacity. A high protein content, soft gluten – is ideal. While the strong gluten flour tends to be a disadvantage. To deal with this you have to work with special proteases to achieve a soft, supple dough structure.

What is gourmet burger bun? ›

89 g weight per piece. A pre-sliced premium burger bun produced using a unique recipe to give a firmer texture ad traditional sourdough flavour. Topped with semolina and finished with a kaiser cut. Approximately 4.7 inches in diameter.

How to make buns more fluffy? ›

Shape and Rise

Each dough ball will weigh right around 3 ounces, give or take. Space them a little bit apart in the baking pan and let them rise until very puffy and the sides are touching. Don't skimp on the rising! If they don't rise long enough, they won't reach their fluff-fluffy potential.

What makes homemade buns tough? ›

Too much flour, or not the right kind, could be to blame. Dough made only from flour with a high or even average amount of protein (like bread flour or all-purpose flour) can become tough from overmixing. Protein gives bread structure in the form of gluten—the more you mix and move the dough, the more gluten you get.

How can I make my bread fluffier instead of dense? ›

Potato Flakes or Potato Water

Starch helps the dough by trapping the gas from the yeast in the dough and makes the bubbles stronger. This helps the bread to rise and be lighter and fluffier. If you are boiling potatoes, you can use the unsalted water in place of the water in your bread recipe to help out the yeast.

What to put on a burger bun? ›

“First, you should start with the bun, then add the ketchup and the lettuce to catch the juices from the burger,” he suggests. “Next, add your choice of patty, then any cheese, and finally, some sort of pickle and then mayo on top.”

Is it better to toast burger buns? ›

I think the taste and the texture of buns are best when lightly toasted. To toast a bun on a grill, grill pan, or griddle, split the bun open, place it cut side down on the grill, and grill until light golden brown, about 10 seconds.

How do you make frozen buns taste fresh? ›

It's best to defrost frozen bread with heat rather than at room temperature according to tests done by Cook's Illustrated. Place the unwrapped frozen loaf in the oven at 325°F for 20-30 minutes. Check the internal temperature if you have a probe thermometer.
